All you need is six ingredients and about 45 minutes to get this hearty meal on the table.
Easy Baked Chicken Parmesan
1 1/2 pounds of chicken breast, sliced in medallions that measure about an inch thick
1 egg, beaten
1/2 cup Italian breadcrumbs
1.5 cups of spaghetti sauce
1/4 cup Parmesan cheese
1 cup mozzarella cheese, grated
Preheat oven to 400 degrees and spray a 9×13 inch baking pan with non-stick spray.
Slice the chicken breast into evenly sized pieces that are about one inch thick. Beat an egg in a small bowl and pour the breadcrumbs into another bowl. Dip the chicken pieces in the egg. Then cover the chicken with breadcrumbs. Place in the prepared baking dish.
Bake the chicken for about 20 minutes.
Take the pan out of the oven, pour the spaghetti sauce over the chicken and sprinkle it with the cheeses. Bake for another 10 minutes or so. The chicken is fully cooked when the internal temperature reads 165 degrees.
Serve over pasta. I also serve it with some spinach sauteed with garlic, oil, salt and pepper.
