For more than a decade, Noodle Theory has been a go-to spot for ramen in Oakland’s Rockridge district.
Two years ago, Louis Kao expanded west to Emeryville. Now he’s gone through the tunnel to open an eastern outpost in Moraga, in the Rheem Center.
The ramen and udon bowls are made with natural, hormone-free meats: Niman Ranch beef and pork and Fulton Valley chicken.
Kao’s also known for his fusion offerings. grilled barramundi over noodles in a spicy Thai red curry, grilled Hawaiian butterfish over roasted cauliflower and noodles in a spicy green curry, roasted mushrooms over spinach ramen, shrimp-chive gyoza, even Chinese five-spice sweet potato fries with green curry.
Noodle Theory is open six days a week (closed Tuesdays). Lunch is served from 11 a.m. to 2:30 p.m.; dinner starts at 4:30 p.m.
