Can’t get enough “Dr. Enuf”?
Never fear! Here’s a recipe that features the “Tri-Cities Original” as a key ingredient in a cake.
In case you missed it, News Channel 11’s Josh Smith debuted a new segment called “Tri-Cities Original” – a look at the people, places, and businesses that you can only find here in Northeast Tennessee and Southwest Virginia.
His first report was on “Dr. Enuf.”
Along the way, Josh kept hearing about a “Dr. Enuf Cake”. Desperate to get answers – and to eat cake – he concocted a recipe closely based on other cake recipes he found using soda drinks.
Josh admits he’s a cook-in-training. And this recipe is hardly a “Tri-Cities Original.” But the two he’s made were eaten without complaint. Or illness.
So – enjoy!
Dr. Enuf Cake
(Full disclosure from Josh: “This is my made-up version based on a few I found online. It’s easy! If I can make it, anyone can.”)
- 1 box yellow cake mix
- 1 box lemon pudding
- 4 eggs
- 3/4 cups oil
- 3/4 cups Dr. Enuf soda
Mix well. Pour into a well-oiled bundt pan. Bake at 325 in a pre-heated oven for 45 – 50 minutes. A toothpick should come out clean. Allow the cake to cool completely in the bundt pan. When cooled, turn the cake onto a plate and make the icing.
Dr. Enuf Cake icing
- 2 cups confectioners sugar
- 1 tbsp. lemon juice
- 2 tbsp. Dr. Enuf soda
Mix thoroughly adding more Dr. Enuf if needed to create a pourable icing consistency. Not too runny! Then add:
Few drops of green food coloring
Make it the shade you like. Pour the icing over the cooled cake and serve.
